Galactomannanase, also known as mannan endo-1,4-beta-mannosidase, is an enzyme that plays a crucial role in the degradation of galactomannans. Galactomannans are polysaccharides consisting of a mannose backbone with galactose side groups. Specifically, they have a (1-4)-linked beta-D-mannopyranose backbone with branchpoints from their 6-positions linked to alpha-D-galactose (i.e., 1-6-linked alpha-D-galactopyranose).
Galactomannans find various applications:
In food products, they increase the viscosity of the water phase. Guar gum, for example, is used to enhance the texture of ice cream and reduce ice cream meltdown.
Clinical use: Detection of galactomannan in blood is used to diagnose invasive aspergillosis infections in humans, particularly in patients who have had hemopoietic cell transplants (stem cell transplants). However, false-positive results can occur in patients on intravenous treatment with certain antibiotics or fluids containing gluconate or citric acid.
Remember that galactomannanase is essential for breaking down these complex polysaccharides, and its applications span both food and clinical contexts
